Egg Whites

The success of the PJ Vadas Pasteis de Nata, which use our egg yolks, has meant that we have lots of egg whites to move. Fortunately, there are lots of gym bunnies and meringue fans who love egg whites. Not sure how many gym bunnies are meringue fans and vice versa.

Pavlova’s are traditionally enjoyed as a summer dessert. But why wait another five months until we can enjoy this much-loved treat? PJ’s fresh pavlova, made with my glyphosate and GMO-free egg whites is literally, to die for. Be sure to top it off with Spier’s home-made lemon curd (for sale in our Farm Cafe) and fresh farm berries.

Mark Muncer

Mark has been responsible for many good things in my life. Having fun with our family, incredible food experiences, fabulous wine, hunting, reloading ammunition, charcuterie and much more. He was the one who pushed me into starting my own butchery. This was whilst he was running the biggest grass-fed beef operation in South Africa that he had built in KZN.
 

What inspires me

Reinhold Messner

He was the first man to climb Mount Everest without supplemental oxygen. He then went on to be the first to climb all peaks higher than 8,000m without oxygen. Here is some of what is my favourite quote: “The true art of climbing is survival, and the point at which that becomes most difficult is when, having mastered what till then has been considered the epitome of achievement, you try to go one stage further.
