Farm to plate

Of all the products we’ve made in the charcuterie section of our butchery, salami has been the most difficult. I could not find a skilled salami maker in South Africa and then in May this year, during a visit to Italy I met an old man named Ugo.

He was very kind to share his recipe with me and so in July, Wikus (our butchery manager), our youngest son, and I started making the first batch. I feel like we are now making grown-up salami. The only difference is that we have not added nitrates and nitrites and so have removed those enablers of colon cancer.

Cooking with PJ Vadas

This month, we’re showing you how to make steak tartar made only with my 100% grass-fed, and grass-finished beef. Did you know that eating beef is best done raw or as close to raw as possible? This is why steak tartar is so delicious as all it needs is some garlic, capers, dill, coriander, gherkin and a few other delicate ingredients to perfect its mammoth flavour.

Farmer Angus family and friends

Nicole Bolus and her husband JP have been huge supporters of our regenerative agriculture project for many years. They are the brains and driving force behind The Loading Bay, Sans and Paulines.

The Loading Bay is where you load up on world-class food and clothing and cosmetics. Sans is one of the drivers of the revolution in ethical retail. Paulines, I am told as I don’t drink coffee, is the place in Cape Town to enjoy your coffee. 

Nicole has always had a love affair with our pigs and as you can see they love her back. No-one has ever been approached like that by our piglets.

What inspires me

This month I have been inspired by Rick Doblin. His singular dedication to getting psychedelics legalised and used along with psychotherapy to treat PTSD, depression, substance abuse. etc is inspirational. He has spent 30 years campaigning and testing and organising trials. 

In our modern society two drugs, namely alcohol and marijuana, are deemed acceptable whereas they are much more damaging than the psychedelics in that they affect the stem of the brain. In fact, alcohol kills brain cells whereas the others don’t. This is all part of my unlearning of my education. I can only hope my TED talk is going to be as incredible as his.
