Dear carnivore. Dear carbon sequestrator. Dear nose to tailer. Dear nutrient density seeker. Dear supporter of regenerative agriculture. Dear farmer by proxy.

We are finally able to present you with half a cow. We have worked on a 300 kg carcass and so you will be getting 150kgs of grass fed goodness.

What you get will be in exact proportion to what the carcass is. For example 20% of a carcass is bones and so 20% of your purchase will be our bone broth which we have been making since 2014. The first photo was the entire half a cow. The photo above is one portion of each of the items that you will get if you choose to fill your freezer with meat the is free of Glyphosate and where the Omega 3 and 6 are in balance (as opposed to grain fed beef (99.99% of the beef market) which is inflammatory and enables antibiotic resistance in your body.). Clockwise from the top. Short ribs, burger patties, mince roll, biltong, snapsticks, filet steak, rump steak, sirloin steak, rib eye steak, boerewors and bone broth.

The above explains better than I could what a block test means. It is the information we have gathered since we started our butchery in 2014 on what constitutes a beef carcass. This is what you will get if you buy half a cow.

Now I am going to elaborate on each item as per photos below.

From left to right.

Biltong snapsticks. We use the topside and the knuckle (these are the least fatty muscles), marinate these in special vinegar, raw sea salt and spices and then dry them until the snap in your mouth. The packet is gas flushed which means it will stay fresh for at least 3 months if you keep it below 15 Celsius and out of direct sunlight.

Boerewors. Unlike your boerewors this does not contain water, gluten, MSG, phosphates, lamb, irradiated spices, pork etc etc. Ours is just special vinegar, raw sea salt and spices. In a sheep casing.

Sliced, moist biltong. The silverside is the muscle of choice for fatty biltong. Same as above. Marinated in special vinegar, raw sea salt and spices and then dry them until the are just not too soft. I apologise for the very poor English but biltong aficionados will know what I am trying to communicate. The packet is gas flushed which means it will stay fresh for at least 3 months if you keep it below 15 Celsius and out of direct sunlight.

On the right are short ribs. These come from the forequarter and from my experience the longer and lower you cook these the softer the meat.

Our burger patties are made from the forequarter and we add 8 grams of raw sea salt per kg of meat. There are 4 patties of 165 grams in each box.

For the mince rolls we use the hindquarter and it is also kept frozen as are the patties. No salt added. Nothing else added either.

On the left are the various steaks (filet, rib eye, sirloin and rump). We have been generous to you dear supporter on the steak front because steak does not make up 10% of the carcass as per our allocation for this offer. On the right is our bone broth.
