Cooking with PJ Vadas: Bacon and Eggs Pesto Cups

Bacon & Egg Pesto Cups


7 whole Farmer Angus eggs

200ml cream

40g feta cheese

1 cup mushrooms – roughly chopped

1 cup Farmer Angus bacon – roughly chopped

1 Tbs pesto

½ cup grated parmesan cheese



Fry the chopped bacon in olive oil until crispy and set aside.

Fry the mushrooms until soft and add the pesto. Mix well.

In a separate bowl, mix together the eggs, cream and feta cheese. Season with salt and pepper.

In a greased 12-cup muffin pan, divide the mushrooms and bacon in each cup. Fill with the egg mixture and top each cup with grated parmesan cheese.

Bake at 180 degrees Celsius for 25 minutes or until the egg is set.

Serve immediately.
